Everyone loves a good cookie. A small business in Red Oak is a cookie lover's paradise. Heartland Cookies is a small business that is ran out of Trina Williams home and the cookies she makes are amazing in taste and spectacular in appearance. She makes custom cookies for all kinds of occasions and has been baking her whole life.
Trina's dad and grandma were the ones who taught her to bake and she is sharing her love of baking with the Red Oak community. She moved down to Red Oak with her husband and 3 sons from Bellingham, Washington in 2015.
Heartland Cookies got its start in August of 2018 when a friend in Corsicana suggested that she started baking professionally. Trina takes orders through Facebook and her email at heartlandcookies@yahoo.com. She doesn't do Doordash because it would cause a price spike for her customers. When she's running a little lot, she recruits family and friends to help her. Otherwise, Trina runs Heartland Cookies by herself.
All of her creations have royal icing, which is a hard icing traditionally made from beaten egg whites and powdered sugar. However, Trina uses meringue powder instead of powdered sugar because it's shelf stable and more consistent. All orders are custom and base prices start at $36 a dozen and go up based on the amount of detail put into each cookie. "Sometimes it can take up to 24 hours for the base layer to dry. Then depending on the detail, it can take up to 4 days for the cookies to be completely finished drying. Some cookies get 9 to 10 layers based on the amount of detail," informed Williams of the long process of making the custom cookies.
With the start of the pandemic last year, Heartland Cookies had a lot of orders get canceled or customers delayed their orders. So, Trina decided the best option was to stop orders all together in the middle of March 2020 and started up again in the middle of May 2020. "It was crazy how it picked up again," responded Williams.
Good things are worth waiting for and the amount of love and care that go into every Heartland cookie is definitely worth the wait.
